The humble onion can be found in nearly every kitchen, and its healing properties have also made it an important medicinal plant. Onions have historically been used as a preventive medicine during cholera and plague epidemics. Nutrients Now recommends that we add raw onions to our daily menu. However, when chopping an onion, a compound called allyl sulfate is produced when the onion’s ruptured cells are exposed to air, which can lead to tear production. To reduce the production of this compound, refrigerate onions for about a half hour before chopping to reduce enzyme activity. Here’s a cool little trick for cutting onions without crying.
