Can’t miss a cup of coffee all day? Is the coffee flavored ice cream not strong enough? Then this DIY Iced Coffee Popsicle from Great Island View is just for you. Freeze leftover coffee in ice cube trays until frozen. They’re super easy to make and will cheer you up on any summer day. Or you just love the idea, pour out some of your leftover coffee, add cream, and enjoy. They’ll be the perfect after-dinner treat for unwinding in the summer.

what do you need:

  • 2 cups of espresso
  • 1/2 to 1/3 cup heavy cream (extra for bottom of mold)
  • sugar flavored

NOTE: Mix about 2 1/4 cups cold coffee with cream and sugar to your liking. You need a little extra sweetened cream to create the white tips of the popcorn.

what to do:

  1. Set aside 1/3 cup of cream, add some sugar to sweeten and stir until fully dissolved. Pour a small amount of this sweetened cream into the bottom of each mold (about 1/4 inch to 1/2 inch high).
  2. Freeze the molds until the cream is completely set (it will take about an hour).
  3. In a glass measuring cup, combine coffee, extra cream, and sugar (to taste). Stir until the sugar is completely dissolved. Refrigerate this mixture until it is cold.
  4. After cooling, pour the coffee mixture into each mold, filling to the top of each mold. Cover the top of the mold with foil, then insert a popsicle stick into the center of each popsicle.
  5. Freeze the molds until the popsicles are completely set.
  6. Once frozen, fill the sink with hot water and submerge the molds in the water (up to but not past the top ledge). Do this for 15-30 seconds, or until the popsicles slide out easily.
  7. Serve immediately or wrap them individually in plastic bags or waxed paper and store in the refrigerator.
